Oh, hello there! Are you ready for another delicious Indonesian recipe? Today, I want to share with you my version of Ayam Goreng (fried chicken) with Bumbu Rujak (a spicy peanut sauce). This dish is packed with flavor and is perfect for any occasion, from family dinners to potlucks with friends.
Ingredients:
- 1 whole chicken, cut into pieces
- 2 cloves garlic, minced
- 1 tsp. ground coriander
- 1 tsp. ground cumin
- 1 tsp. turmeric powder
- 1 tsp. salt
- 2 tbsp. vegetable oil
Instructions:
Fried Chicken
- In a large mixing bowl, combine chicken pieces, garlic, coriander, cumin, turmeric powder, and salt. Mix well and let marinate for at least 2 hours or overnight.
- In a large frying pan, heat vegetable oil over medium-high heat. Once hot, add marinated chicken and fry until golden brown and cooked through, about 10-12 minutes per side.
- Remove chicken from pan and place on a paper towel-lined plate to remove excess oil.
Bumbu Rujak
- 1 cup toasted peanuts, finely ground
- 3 cloves garlic, minced
- 3-6 bird's eye chilies, finely chopped (adjust according to taste)
- 2 tbsp. tamarind concentrate
- 1 tbsp. palm sugar
- 1 tsp. salt
- 1 1/2 cups water
- In a small bowl, mix tamarind concentrate with 1/2 cup of water. Strain the mixture and set aside.
- In a large frying pan, heat vegetable oil over medium heat. Add garlic and chilies and fry until fragrant, about 1-2 minutes.
- Add toasted peanuts, tamarind concentrate, palm sugar, salt, and 1 cup of water. Mix well and let simmer for 5-10 minutes, or until the sauce thickens.
Now, we can serve our Ayam Goreng Bumbu Rujak together on a platter! I usually garnish with some chopped scallions and cilantro for extra flavor and color. Enjoy!
